Good point to make. I'd recommend two things: first, before you save a pattern with a new track, throw a quick volume message on the track (step edit tick 0, wiggle volume knob) so you won't lose your settings. Second, and more importantly, try using the "erase track" button shortcut when you mess up a take. Simply press Erase+TrackButton to delete the events on a track.
