PS. if you did want volume changes recorded in, you could use cc#11
which is expression.  Simply assign a programmable knob to cc#11 and
record that instead of volume (cc#7).  Actually, this is a good idea in
general, because you can then use expression for musical things while
still being able to use the volume knobs for "mixing" purposes.
