Hendrik and Adam allready said most of what could be said, just a few
additions:
If you setup an instrument for multiout useage, there's not necessarily the
need to save it under a special name. The EXS is handling multiple outs
"dynamically", so you can still use the instrument as a single out one in
case you don't use it as a multiout instrument and/or have no auxes created.
Note: This ain't true for recycled loops! I have routed some slices of some
recycled loops to individual outs - after that the "extract sequence from
recycled instrument" function won't work properly any longer! A big, big
bummer, if you ask me - I hope they'll fix that soon.

Again, Hendrik said most about it. The rule here is: The only thing possible
to be edited for multiple zones are "switches", i.e. one-shot, group
assignments and the likes. It is however impossible to edit any value fields
for multiple zones. Again a big bummer and most likely one of the most
annoying EXS shortcomings.
This would also answer your question about relative changes, it's impossible
as well!
But you're right, it'd be VERY nice if the EXS would allow for absolute and
relative changing of multiple selected zones parameters, just as possible
with the sequence parameter box (or the Event List, for that matter).
