In your song folder, create a folder called "Sampler Instruments" 
(identical naming to the one in the Logic folder).  All instruments 
you store there will only be available from the song, and will thus 
not clutter up your menu when doing other songs.

Select all zones you want to assign to a group, and while pressig the 
option-key, pick a group from the menu: all selected zones will be 
assigned to that group.  This works for quite a few parameters, like 
Single Shot and such.  Not for all though, unfortunately.
