Here's how I would proceed.

My first approach would be to record the MIDI out of the XX-7 into the host
DAW (Cubase SX, ProTools, etc) with the DAW providing the master MIDI
clocking to the XX-7 and the DAW recording in multi-channel mode.  This
would then let you use the DAW later to drive the XX-7 as a sound module and
use muting of each MIDI track to control what is recorded when.

But if for some reason the MIDI recording approach does not work well then
you still have a choice of using the XX-7's sequencer to control the sound
module and do multi-tracking of audio, either using the XX-7's six separate
outs or just doing it a stereo pair at a time.

Since there is no easy way of to solo a single track in song mode then I
would suggest an alternative - disabling the actual XX-7 synthesizer
channels associated with a track.  This could be one or more if you do heavy
sound layering.

Probably the easiest way to do this is to use the MIDI Enable feature for
each channel.  In EDIT-MIDI scroll until you get to the MIDI ENABLE submenu
and simply find each of the channels you are using (01A-16B).  Turn those
used one's off and turn back on the one (or ones) you need to record for
each pass.

These act like system-wide mutes on the synth module and are very handy for
quickly turning things on or off.
