Alwyn's right.  If you have a track set to "external" it won't work to
change the key in grid rec (or any of the other menus either, like key
range in the preset).

A temporary workaround is to use a track set to "both" and a silent
preset internally (like 127'3).  This unfortunately has the side effect
of not sending external program changes though.  You could work around
that with a single external "multiA" (or B) track that does all of your
program changes but has no notes.
