I wonder how many of these pros you've actually asked.

Most studios need some common interchange format, so you'll see lots
of Pro Tools rigs around, but I don't see any particular preference
for Mac over PC. Logic is pretty strong (although now it's Mac-only
we'll see if that lasts) but not pervasive. I certainly don't think
high-end analogue recording is that prevalent outside some rather
specific cliques; these days you can get the sonic quality of analogue
before printing to tape or disk.
