Yes, I would use one of those supplies. You then would have just a 5-pin DIN connector (just like a MIDI jack) on the back of your desktop device (the Elpac supply comes with a 5-pin DIN plug). I've been thinking about a similar little device. I currently have a mega-control center mounted in a DJ case that has two joysticks, two JAGs, two Noise-Rings, a PSIM, two Blacet multiples, and two Blacet linear VCAs but it is a bit large (I'll post a picture). I think what you are considering (two joysticks, a JAG, and some attinuator/multiples) is about the correct collection.
