Nope. You still would have to have a pitch to voltage converter for each string, assuming you need to generate 1V/Oct cvs to make a VCO track correctly. If you are not worried about using VCOs, you could just use the envelope follower / preamp solution to mangle your guitar sound with filtering, envelopes, and other signal processing. Matter of fact, if you used an ebow you could make the string act pretty much like an oscillator. So there's a lot you can do with a preamp and envelope follower, you just can't make a VCO track.
