One other joystick decision you have to make: Do you want one that is self centering, or not? I have one that stays where you put it, which is very useful for lots of things like quad spatial panning, etc. A spring loaded return to center type would be an annoyance in this application. Probably I'd want one of each type. The good thing about the non-centering type is that you really don't need the 2 extra pots for offset, since you don't care about return to center.
