Go for the 370 degree C one.

That's the Mil spec temperature, in other words, the temperature that military electornics 
engineers use for a very reliable solder connection. Too high a temp and the flux will 
evaporate and the solder not flow out well  enough, to low a temp and it takes longer for 
the solder to melt, the danger here is due to the longer heat transfer, more heat goes into 
your delicate electronic parts, with higher risk of damage.
