I think part of what many of us are after is the "immediacy" of a VC Controller as opposed to a MIDI controller. If I want the X axis of a joystick to control a filter and the Y axis to control LFO rate, I just want to plug in the patch cords and go. I don't want to have to worry about configuring a MIDI box to receive the correct controller number and route that to a particular output and then to the filter. By the time I've gotten that straight, I've probably forgotten why I wanted to patch it that way in the first place. For myself, I'm trying to come up a controller that would have 2 wheels, a joystick and a short ribbon (6 to 8 inches) with attenuation (+ or -) on all outputs. Give me that along with a keyboard that has low/high/last note priority, plus single or multiple trigger/gate options, and I'm ready to go...
