Cubase VST ships with a free VST "scope" plugin--if you happen to own
Cubase, you can just arm a channel and open the scope as a master plugin and
see everything realtime (well, there will be some latency, but in hundreds
of milliseconds or less).

I'm sure others have such things as well--I believe Sek'd Samplitude has a
scope to view during recording to check phase, but I'm not sure how much you
can configure it.

I'd be surprised if there weren't other standalone 'scope applications
available for Macs and PCs.
