It's mostly a matter of more parts = higher difficulty. Sometimes,
you have other things to worry about than just stuffing the usual
components. For instance, the MOTM-300 and (I think the) MOTM-440,
there is the tempco and heat shrink compound to add to the usual fare.
Not a big deal, but they are extra steps over the simpler modules.
Like Ken mentioned, it's VERY important that you take your time. If
you rush, that's where problems come in. It's also a very good idea to
read over the entire instructions before you even pick you start the
actual assembly. Make sure you understand all of the instructions
first, and there should be no problems.
Another thing that you can do is to start with a module that is lower
on the difficulty rating, like say an EG the MOTM-390 LFO. That way,
you'll know what to expect with the larger modules.
