In addition to knowing which processor chip is used & schematics, you will need the memory map, a compiler & debugger and without source code, you will have to reverse engineer all the machine level code. I doubt the original code what written in machine language as this is not the preferred language to write code. Debugging will take you many many hours without a hardware emulator that can be used to host code and step through the code sections to ensure proper operation.
