Although it should be pointed out that the Quick Edit knobs will be controlling either Gate Time or Velocity if you stay in Grid Record mode, just a heads up. rEalm retbah is correct. Press & hold play and hit rec. Also, just so you know, you don't even have to leave record mode at all if you don't want to. You can go in and tweek a preset (and save it!) without even punching out.
