You are probably used to dealing with individual samples. For 
instance, "kick" or "snare" or "string-sus"

In E-mu land, these are all grouped for you into "instruments". This 
is why you can't create your own kits per se... you are stuck with 
whatever was done to make that "instrument", or grouping, at the 
factory.

There are ways you can get around this for custom kits, etc... but 
that is the difference between an instrument and a sample (or "wave" 
in Yamaha terminology).
