If you're just getting started and at the point of needing to understand 
the interconnections and relationships between modules, then the electronic 
music department of the University of Oregon has a great on-line tutorial:

The University of Southern California has a nice overview of a Moog modular 
which is in their labs:

You have the E-MU operations manual, but the old catalog is also worthwhile 
for folks to get an idea of what modules are about:
