Until I add a mult to my system, I was thinking about using a Y-cable
to get gate signals from my MIDI/CV converter to two EGs. Will this
work? What about going from the CV out to two VCOs? Isn't a mult
essentially a Y-cable? Thanks, -jl

Yes, a Y cable is a mult, and it will work fine for EGs and VCOs. You
can also get these "two jack + one plug" thingamabobs from rat shack
that work like Y jacks. I bought a dozen of those years ago and I
still use them.
