If there will be coarse and fine tune knobs, then I say make the fine
tune one the "large" knob, but give it a wider range than a normal fine
tune.  Plus or minus one octave would be good.  

Newark has an MOTM style knob that is 1.80" in diameter, by Multicomp,
part number 92N4111 (Newark) and MCCFX1S.  If that's too much they also
have a 1.30" knob available.
