In a word, polyphony.

You get what you pay for, more or less. The Encore has 8 CV outs and 
8 Gate outs, for instance. It has other cool features like built in 
LFOs, poly assign routines, and kbd zones.

The less expensive ones are typically single channel, and will be 
fine for monophonic applications.

If you think you'll grow into a bigger unit, then you have to decide 
if it makes sense to invest now or trade up later.
