In a word, polyphony. You get what you pay for, more or less. The Encore has 8 CV outs and 8 Gate outs, for instance. It has other cool features like built in LFOs, poly assign routines, and kbd zones. The less expensive ones are typically single channel, and will be fine for monophonic applications.
