That was a documentation error. The example in README and
greylist.conf(5) showed a %s that does not really exist. The sender
e-mail address is %f. I just fixed it in CVS.

%S is the SMTP status (accept, tempfail, reject)

The list of format string substitutions in greylist.conf(5) was correct.
