Unity latency sucks and doesn't integrate well with VST mixing. Unless your Hans Zimmerman (sp?), what the heck do you need more than 16 instruments for anyway? (soon to increase in Logic 4.7 I believe) I can see if you have the budget to get 64 independent tracks of input back into Logic, using all your PCI slots, then you can mix with VST, but I think you're missing the point of the beauty of the EXS24 completely. You're probably better off in your outboard world, my friend, you obviously mix using a mixer and not VST FX. There is something to be said for the power that exists in my PowerBook laptop. You are comparing apples to oranges. The EXS is right for a lot of people, just not for you...
