You don't need the SCSI upgrade kit as the Emax SE HD already has SCSI. If you want to use external SCSI ZIP drive, you will need to extend the 50-pin SCSI ribbon cable to a 25-pin SCSI connector on the back of the rack case. This will require carefully and correctly wiring the internal 50-pin SCSI connector to the 25-pin external connecter (which external SCSI ZIP drives use). If you want to use an internal SCSI ZIP, just replace the HD with the ZIP and make sure the ZIP is set to SCSI ID#0. You'll need to use a file or other cutting tool to slightly widen the floppy drive slot to allow the ZIP disks to pass in and out as they are slightly wider than the floppy drive slot. The Plus OS enables you to switch between multiple devices at different SCSI IDs. If the ZIP is at ID#0, I believe it should work just fine as it will act like a hard drive. If you need the Plus OS, I believe it is in the "Files" section of this Emax Yahoo Group.
