The 2 RAM chips duties aren't divided separately - they share the sampling, and also pattern and song data and settings as if they were one 128k chip. In the day it was made, one 128k chip was probably a fair bit more expensive than two 64k chips, so it would have been those reasons they used 2 chips. You will need to swap both chips for two 4MBit chips in this case. I did the same thing with my Alesis MMT8 expansion, which also has 2 chips, in the same way, and it works great. Switching the extra lines - yes you could just use toggle switches. Each switch connects to each same pin of each chip in parallel, so they switch the same line on both chips at the same time. Using an encoder to toggle the 4 extra address lines is the more elegant way but in the end the 4-bit rotary encoder is just 4 toggle switches in a convenient package. You can buy those 4-switch banks DIP switches for circuit boards for very cheap like these if it's neatness or compactness you need: http://au.element14.com/grayhill/78b04t/switch-dil-slide-4way/dp/9479040 But I really like the rotary encoder because it displays a number that tells me directly what bank I'm in, rather than switch positions. And it sits flush with the surface of the RZ, rather than switches to get bumped, if you use normal toggle switches.
