But doesn't canvas have a texture? In other words, does canvas look
like "canvas"? Also, does canvas results in less resolution and
rougher tonal transitions?

The answer to all your questions is yes.

Try http://www.livick.com/method/inkjet/pg1.htm   He makes tiled prints that 
are huge. He glues them to lexan and then covers them with a water based 
clear coating. If you can get the coating, this may work for you.
