Reducing disk usage is not a specific goal, but I see no reason to use 3 times more space (and make the work go slower) if it isn't needed. As for being able to tweak the color2bw settings later in the work, I haven't ever felt the need to do that. I give careful consideration to that stage in the beginning. From experience I can tell from looking at the various settings what I'll be able to accomplish tonally. So I make my choices and live with the result. I basically think and work in grayscale.
