Josh, This is not a book, but my web site has an in-depth explanation of Photoshop's Hue/Saturation, Levels and Curves adjustments. I use Levels and Curves a lot to darken/lighten/increase-decrease contrast in an image. There is a section on the web site that discusses converting color to B&W, but if you use B&W film, then the section would probably be irrelevant. I think Photoshop's help gives a fairly good explanation of layer masks. In Photoshop, click Help > Photoshop Help, then click the Search menu and search for layer masks. Try reading the topic titled Creating and Editing Layer Masks. Not sure the topic explains it, but one of the things I do a lot is to Alt-click the layer mask to display the mask in the document window. This shows you exactly what the mask has in it.
