Jerry, To the best of my knowledge: The Variable Mix has the toner in the M and m positions to produce variable tone. The Full Spectrum is the "Piezo Clone" that closely matches the Piezo ink set in tone and color. The original set uses the inks in different dilutions and in different positions in the cartridges. I believe it is reported to be redder but I have not seen an example of this ink set myself.
