The Art Institute holds the Irving Penn archives, who in my mind is perhaps the greatest photographer of all time. Not sure how much is on display at any time but I'm sure there's plenty. Also, AIC has a sizable collection of Joseph Cornell's media boxes, which are extraordinary works of art. Not far from there is Edelman Gallery.
