In my experience: --neither the CZ-3000 nor the CZ-5000 (a) respond to or (b) transmit non-zero velocity data other than treating it all as 64 (as has been mentioned). --the CZ-3000 is a CZ-5000 without the sequencer. --the CZ-3000 does allow sequencer sysex commands to access the memory [storage] that would be used if it were a CZ-5000 and had a sequencer. As for reading manuals and midi implementation charts (someone suggested doing so), while in general that is the first place to look, sometimes (with some gear) there can be undocumented features. For example, the CZ sequencer (true with the synth engine, too) can have data sent to it via sysex bulk data messages that you cannot do via the panel.
