Patches can be changed at any time, even during a song. The method usually doesn't require a MIDI CC command, though; it uses a MIDI Program Change message. In Cakewalk, it's called a "Patch Change" message, or "Patch" for short, and can be inserted just like a note. I don't use Sonar, so I'm not sure what it's called there. The only thing to watch out for: The AN1x, like many keyboards, cancels all held notes when changing patches. If you wanted to use the Program Change to alter the timbre when playing, you'll have to re-trigger the note(s).
