The curve is the relationship between how how you hit the keys and the
velocity registered....you can effectively change you playing style this
way. So people who are a bit 'heavy handed' as you say , should change it so
that the 'medium-hard' notes they play are actually played  back as more
softly-played ones....so you should try some of the curves that bend
upwards...(concave if you like)
