Is the noise present only when a note is pressed and can you filter the noise?  This can help locate at what point the noise is introduced.  Also, you say the notes ends with a Pacman sound?  Have you a recording of this noise?

Some of the capacitors here and there were almost dead so we had to be replaced them all.

Yes, the technician replaced them one by one with the same type/size new capacitors. Also, as the most of the ICs are socketed, we also replaced them one by one with new same type ICs and the issue remained the same.

I agree, I have only replaced the capacitors on power supplies, of my old synths, but in this case we had to replace them all.

What do you suggest to check ?
