Any recommendations?  I do like the sound of Fritz Doddy's alternate set mentioned
in the Mellotron book:  medieval woodwinds/M300B strings/bass accordion+cello
split.  Maybe swap the medieval woodwinds with bass clarinet.

Hi, Andy, and welcome to the fraternity. 
M300B strings are a must.  I personally don't care for Medieval Woodwinds ("one man's medicine...").  There's a lot to choose from; best advice is to pick what you're likely to use the most at this stage, and go for the more "exotic" sounds later on.
