I use a Dremel for this, goes through it real easy since they seem to be 
some sort of alloy, just be sure to use a small vice or long nose pliers 
to hold the shaft as they can get hot, holding it at the pot side also 
helps (a bit) to prevent heat going to the pot itself as the pliers/vice 
acts as a heatsink. I have also used a Dremel to convert round shafts to 
D shaft (in a pinch), but in this instance it pays to let it cool by 
taking small amounts off with a few minutes between each, I also 
recommend covering the pot in tape to prevent any swarf/fillings to get 
into the mechanism.

I have used the plastic "eco" pots before as well and they seem fine to 
me, also much easier to cut down :)
