I've got 24 GA, stranded, bonded, PVC insulated hookup wire in a dozen colors on my workbench.  Plus some 18 GA green for ground & heaters, and some 14 GA for the wall-side of power supplies.

24 is a little easier to work with than 26 GA, and the colors make it easy to keep straight.

I found all of it really hard to strip without damaging the copper using sharp tools, so I wound up with a Teledyne thermal wire stripper.  Works great on PVC, but not teflon.
