In that case I'd use the all analog solution... it would be very easy to do.
The EFM KBD1 module and a handfull of resistors would do it.

You could still use string "plucking" to get amplitude from.

There was a 70's project in Popular electronics called the (iirc) "Touch-a-Tone"
which was an instrument similar to what you are envisioning. I don't have the
article anymore but I'm sure some sick b at stard on this list probably DOES...

...so help Dom out, eh ???

Or how about a quantized ribbon controller ???
