I've got a page on pot substitution. See

125K should work fine in a circuit calling for 100K.
There are loading effects - if you have a typical 100K input resistance for
a CV input, it will load down a 100K pot and warp the response (you can
actually simulate a log pot with a linear pot by doing this on purpose).
Generally you want the pot value to be about 1/10 the load resistance to
avoid this (i.e., a 10K).
