A slightly larger capacitor won't hurt. If the original circuit was properly designed, there won't be any advantage (lower ripple) either. If the original is adequate, a larger capacitor only means a greater inrush current when it's switched on. So it's not a great idea to put a 1F capacitor in there, but 1200 µF is fine.

OK, so I went for a total re-cap, and found that the power supply
features two 1000uf/35v caps placed across the ground and each of the
two sides of the transformer (before the regulator IC).

I wonder, can these be replaced with 1200uf without any issues ?

The schematics is under the Files section...
