In Files/Waveforms/ there are some interesting simple circuits using a 6AG7 "diode 
connected" (diode modulators, etc)

Does it mean those are passive circuits?
No need to apply voltage even to heaters?

Excuse my ignorance...

You will always need to heat the heaters.

excuse my ignorance too..
but why do most of the circuits in Waveforms use a 6AG7 diode
connected, rather than just a regular diode tube?
Is there some advantage to using a pentode as a diode?

... germanium diodes would be OK?

I'm just guessing since I've seen a Ring Mod done with diode tubes instead of Ge diodes...
(I have some 1N60 with 0.22V fwd drop)

Remember that germanium signal diodes have a very low reverse voltage -
often uner 10V, so make sure you don't exceed the given rating.
