Instead of mounting Pots on the face of the Poly 800, couldn't I mount
2 1/4" jacks on the back, route the wiring that would normally go to
those, and use a CC pedal (or two) ?

Of course, this would inhibit use of these controls while the unit
is "strapped on", but I don't think many people use it keytar style
anyway, right ?

Or am I missing something obvious ?

My only concern would be the impedance rating of the pots vs the pedal. I'd assume it'd work, though...?
