The E-II OS (again 3.1 is newest) loads from floppy disk each time you boot the machine. It just seems all of your disks contain the HD OS so you need to find a formatted disk with the proper OS software. If you are in the UK your best bet is contacting Rob at Emulator Archive. He can answer all your questions, help you obtain cables and disks, as well as point you to a proper tech. Please read the information located here:

As for a Mac choice they are all "Legacy" Macs. You are going to need to do some research on your own as there are many models that will work (again please use the group links section and compatibility database). It is my experience that you will do best with a Mac that has at least 8mb of ram, a decent sized harddrive, the ability to read 1.44mb floppies, a Cd-rom drive, and OS 7.1 or higher.
