CGS67 Transformers?

10k is fine. Just make sure it has a center tap on at least one of the windings.

I forget: was there a way to use transformers w/ two center-tapped windings? I can no longer find them without!

Two center tapped windings are fine. You simply don't use the center tap on
one side.

Will it matter if I put the primary side one way or the other?
Since I got transformers that were center tapped on both sides, I just cut away the middle leg on the primary side!

And put them in so that the primary side faces outwards on both transformers -

I have no idea why I did this, it just seemed like the right thing.. Was it correct?

And using single turn trimmers wasn't such a good idea. Since it's very hard to null the output with them..

What you have done is right. You have balanced the coils around the diode
ring, which is what you want to do.
