hi Ross,
that's easy to answer:
think of sounds that you need tiny controllable and constant 'wobbles' and minute changes in every thinkable sound aspect possible.
think of a vco fm'ed by another vco which is also fm'ed by a third vco and all three controlling only one of the parameters of a patch.
now think how many vco''s you would need to bring to life many of your patches' param eters. (actually, even more than the 9 vco's i have... but i also use DTG's, etc...)
no, i do not use my many vco's for thick pads mainly (although i could easily do that of course).
if you want to create non-linearity in sound parameters, you do need multiple self-cycling cv sources with different and unrelated rates...
yes, you can do this with the combined use of DTG's and DSG's and random sources, but you still need more sources of nonlinear changes. (at least i do, for the kind of organic sounds i want to make)
and that's where all these many vco's come into...

Can i hear an example of what a person is doing exactly with more than
the 3 VCos? I assume you are talking thick pad sounds?

The way I work and the sounds I create, experimental sounds, as per my
YouTubes, i dont feel the need for more VCOs, but I guess i you are
making more string/pad/Bass etc sounds it must be great :-)

Mind you saying all this I currently have 9 VCOs = 3 Serge, 2 Buchla,1
Plan B, 1 Livewire, but i dont really use them all in the same timbre.
