Homebrew PCBs

Okay, my next question...

I see on most circuit boards that they have a ground plane, large 
areas of copper trace.  Should I always do this on boards?  And does 
it matter if it doesn't surround the entire board?

No, and no.  For your first boards, don't WORRY about  such!
