There are also rivets/eyelets you could put in the holes, but the cheapest  
way is to solder both sides.

Yupp, I've got a gazillion 330ohm resistors that I use for vias.  I just
hold one in a drilled hole, solder, cut, flip the board and solder the other
side.  It's not as beautiful as I'd like it to be, but it works and it's
quick.

but you have to make sure you don't have any vias under the components.
also be careful with through hole components as not all allow for easy access
on the component side (bases, switches, caps, etc.)

You can put vias under componenents, you just have to remember to solder 
them first. 8-)

Well, you can't exactly call this type of solder covered thing a solder  
joint.
I mean the reliability could be problematic.

Probably not going to matter for prototypes and homebrew stuff, but i  
wouldn't want to put it in anything important.
Those eyelets tend to be a reliability issue as well and they have more  
contact area.
