I either cut my own mats to fit or have them done professionally. I don't use stock mats.

I am curious how (or if) folks print for mat sizes.

If you print a 5x7, 8x10, 11x14, etc., do you make it that size? Or, do you
print it 1/4" smaller on each side (like photo easels used to do) so that it
  "fits" stock mats?

Like Diane, I've never used stock mats. Where the print falls, somewhat
within a 'standard' size, I have the mats custom cut to keep a .25" reveal
three sides of the print, and .625 bottom. Just a matter of how you like to
present your work I think, I like to see the whole image with the paper
showing a bit as well... I was fortunate to be able to see a couple of
Stieglitz's albumen prints once as well as a few salt prints from that same
era, and happily surprised to see them matted similarly, they were signed
under the image, on the paper.

Yes, I prefer to see some of the paper also but I hadn't arrived at exactly how much. I also sign on the paper under the image so I like Carolyn's measurements. I've been 'eyeballing' it after I sign--I'll try to standardize this and it will make it much easier.

There can be a good reason, though maybe a little picky, for leaving some of
the paper showing between the edge of the overmat and the beginning of the
image. When the print is is exhbited in a gallery with ceiling lights angled
down at the prints the edge of the overmat will sometimes cast a shadow. The
shadow may appear on the top of the image if the image is printed to the
edge of the overmat. By leaving space between the edge of the overmat and
the beginning of the image the shadow, if one is there, will (hopefully) be
cast on the space rather than on the image.
