It's funny that Bruce mentions the AN1X as a poor choice for electric piano. That's the sounds I use the most. I usually have a bell or a xylophone sound on one scene, and a more piano like sound on the second scene, then layer them. This leaves me with only 5 note polyphony, but in rock, sometimes even that is too much. The AN1X does not have realistic electric piano sounds, but has lovely sounds that fit in the tonal range of the electric piano. For bell sounds, try tuning one osc a fourth above the other(5 semi tones). As for organ sounds, I've got a friend with an old Hammond spinet(an L100) that screams.
