Hm...Fix your computer and get a fresh copy of Adobe-reader and 
download the manual:

You can only play 2 Tracks (i guess you mean the MIDI-channel) at 
once (with two different patches) (of course you can play 16 tracks 
on two MIDI-channel...but that will sound 
kinda ...hm...interesting...:::rushes to his computer to experiment 
with old GM-files....::: ;O)

Im new at this stuff and I have no clue what all this cutoff

Oh, there´s a lot to explain. I highly recommend you to get your 
comp. fixed, get Adobe-reader, download the manual and read it.
